How to Use and Rehydrate Dried Okra

We've cut fresh okra, soft enough to enjoy raw after salting and washing, into large pieces. It retains its color and shape even when heated, and you can thoroughly enjoy the unique slimy texture of okra.

  • Topping for hiyayakko (cold tofu): Served on cold tofu with soy sauce or ponzu, the slimy okra and smooth tofu create an exquisite dish.
  • Ohitashi (blanched greens): Lightly seasoned with soy sauce or dashi, it makes a simple yet profound ohitashi.
  • Gomae (sesame dressing): When mixed with ground sesame, the sliminess of the okra and the nutty aroma of sesame are a perfect match.
