We've cut fresh okra, so tender it can be eaten raw after salting and washing, into large pieces. Even when cooked, its color and shape remain unchanged, and you can fully enjoy the characteristic slimy texture of okra.
For example, fresh okra tends to become soft when heated. Dried okra has a chewy, satisfying texture. Furthermore, while fresh okra becomes watery when frozen, dried okra can be stored for a long time and remains crisp.

How to Use Dried Okra
When eaten as is, it's slightly sticky and light. When added to soups or takikomi gohan and heated, it becomes stickier and the umami is richer. No pre-preparation is needed, making pickles and microwave dishes easy.

About the Okra Ingredient
We use a variety called "Helcie," which has a strong, characteristic okra sliminess and a slightly whitish color. When fresh, it is characterized by its tender flesh and is exquisite when simply grilled. Helcie is a Phyto Rich variety developed by Takii Seed Co., Ltd. in Kyoto, and contains soluble pectin, a type of dietary fiber.
