Captivating crimson and hidden sweetness

Beets are well known as a superfood due to their amazing nutritional value. They are a member of the sugar beet family, which is the source of sugar beet, and become even sweeter when dried. Their striking crimson color is due to a pigment called betacyanin, a type of polyphenol. The red soaking water, which is full of polyphenols, also adds color to dishes.

Beets are hard, so peeling them is a lot of work, and if they have soil on them, washing them with water is also a lot of work. Dried beets do not require any pre-processing, and even if you boil them to soften the earthy flavor, they take less time than raw beets. Even when dried, you can still enjoy the firm texture that is characteristic of beets, and they are not only sweeter but also more delicious.

■ Beets, a familiar superfood ■ Colorful Shinku is a type of polyphenol. No pre-processing such as washing with soil or peeling is required. Available in thin or cubed slices to suit different dishes.

How to use dried beets

Thinly sliced

It can be used in soups and stews like borsch, of course, but we also recommend lightly rehydrating it and mixing it with seasonings to make kinpira, or finishing it with olive oil and your favorite vinegar to make a carrot rappe-style dish.

Cubed

In addition to soups and stews like borsch, you can boil them until they are soft and make chopped salads or mix them with potato salad. You can also use them as a filling for steamed bread or scones, taking advantage of their sweetness and texture.

How to rehydrate

■ We recommend stews such as borsch, as well as rapes and marinades.
■ Potato salad is recommended because of the chunky texture.
