Drying makes them sweeter!
A surprising new experience with dried cucumber!
Even among dried vegetables, dried cucumber slices are still quite rare, yet they hold amazing flavor and texture. Why not explore new and delicious cucumber recipes beyond just salads, pickles, and preserves?
The naturally fruity and sweet flavor, which might have been subtle in fresh, juicy cucumbers, becomes distinct. The texture also changes from crisp to a chewy, satisfying bite. Surprisingly, the aroma remains fresh and refreshing. Dried cucumbers offer a different texture and taste from fresh vegetables, providing a surprising experience once you try them. They are one of our most popular dried vegetables with many repeat customers.

How to Use Dried Cucumbers
First and foremost, we recommend eating them as they are. The sweet umami flavor can be used as a broth, and the chewy texture can be incorporated into dishes. Feel free to try them in unexpected dishes where cucumbers might not typically be used, such as seasoned rice or soups.
■ When used in sunomono (vinegared dishes), the crunchy texture becomes addictive
■ Recommended for seasoned rice, which isn't possible with fresh cucumbers
How to Rehydrate Dried Cucumbers
The unique characteristic of cucumbers is that their texture changes depending on how they are rehydrated. Just by adjusting the rehydration time, you can broaden the range of recipes beyond salads, pickles, and preserves, making dried cucumbers even more delicious.

About the Raw Cucumbers
We use traditional cucumber varieties that have not been crossbred. When you bite into a freshly picked cucumber, it's not only crisp and juicy, but also has a rich flavor reminiscent of being pickled in rice bran. We also use cucumbers that have curved due to sharing their essential moisture and nutrients with their siblings during growth, showcasing their family-oriented nature.
