Recommended Dried Vegetable Set for Those Who Can't Decide
Because they are long-lasting, these vegetables retain their freshness and can be enjoyed anytime. Since they are harvested fresh, they offer the delicious taste of just-picked vegetables. Dried vegetables, with their unique flavors, aromas, and textures, are a "new delicacy from the farm." While dried vegetables are a traditional Japanese preserved food, drying not only enhances their umami and nutrients but also reveals their hidden charms that might go unnoticed in fresh vegetables.
From such dried vegetables, OYAOYA has selected and assembled a recommended set. Please use it for yourself or as a gift for friends.

How to Use Dried Vegetables
Dried vegetables are long-lasting preserved food, so you don't have to worry about freshness. Seasonal vegetables that are usually limited can be enjoyed for a long season as dried vegetables. Also, OYAOYA's dried vegetables do not use glucose, etc., so depending on the dish, rehydration in water or hot water may not be necessary. When making soups or takikomi gohan, just adding them will create a rich vegetable broth.
In the northern Kyoto Prefecture area, where OYAOYA's vegetables are produced, there are many professional farmers who are committed to cultivating vegetables, from sustainable soil preparation using local materials to cultivation methods. In their hands, not only high-end vegetables like Kyo-yasai used in traditional Japanese restaurants, but even everyday staple vegetables for home cooking become incredibly delicious. We have carefully selected such vegetables for this set.

Dried Kujo Leek
There is almost no spiciness characteristic of leeks, and you can enjoy the sweet umami unique to Kujo leeks as you chew. When heated, it becomes soft, and you can enjoy a corn-like flavor that is not found in fresh Kujo leeks.
With thin skin, a refreshing herbal aroma, and vibrant orange color all the way to the core, this orange carrot is delightfully flavorful. It's also rich in carotene, which has superior antioxidant properties compared to common Western carrots.
A balanced mix of the melt-in-your-mouth soft white part and the characteristic texture of the green leek part. When heated, its sweetness increases significantly, and the pungent spiciness also remains, making it versatile for cooking.
Softer than fresh onions, they easily regain the juiciness of new onions when rehydrated. The melting sweetness and soft, fluffy texture, which can only be experienced with dried onions, are unique.
Made from large tomatoes harvested after full ripening, their sweetness is like that of fruit tomatoes. The slight acidity is refreshing, and they rehydrate to a surprisingly soft and juicy texture, unlike what you might expect from dried tomatoes.
