These user-friendly dried shiitake mushrooms are thickly sliced and dried at 3 different temperatures. They have a tender texture, are softer than regular dried shiitake, and are packed with umami. They rehydrate quickly, saving you time in the kitchen, and the rehydrated liquid can, of course, be used as dashi (broth), but we also recommend enjoying them as they are.
While rich in aroma and umami, they have almost none of the distinctive earthy flavor found in fresh shiitake. Since they are dried to be moist and soft, when they absorb water, they regain a texture similar to fresh shiitake, offering a delightfully tender taste.

How to Use Dried Shiitake Mushrooms
Because they are carefully dried at low temperatures, a characteristic feature is that they rehydrate thoroughly, like fresh mushrooms. In addition to conventional ways of using dried shiitake, we also recommend using them as an ingredient in dishes to enjoy their meaty texture.
