These days, there are more and more domestic dried fruits available, but you don't often see dried pears, do you? That's precisely why you might be curious about their taste and texture.

Dried pears are best made not from sweet, soft red pears like Kosui or Hosui, but from green pears that have some tartness and a crispy texture. Imagine savoring the transformed flavor of pears, reborn through drying, as you would read a letter arriving from an orchard.

The chosen variety is Nijisseiki

The green pear variety chosen for our dried pears is Nijisseiki, a long-loved variety known for its refreshing tartness and gentle sweetness. We use Gold Nijisseiki green pears, cultivated in an orchard in northern Kyoto. Unlike red pears, which are popular for their overwhelmingly sweet varieties with almost no tartness, Nijisseiki pears have a more modest sugar content. By slowly drying them at a low temperature, their sweetness becomes increasingly concentrated.

The pleasant lingering tartness also serves as a refreshing accent to the flavor. While the texture transforms from crisp to moist, each slice offers the same satisfying experience as fresh Nijisseiki pears. Sliced to resemble stationery, these dried pears become sweeter with every chew, offering a taste that is new yet somehow nostalgic.
